This is another here and there chaotic week. Next week will be too! I don’t have much more to add than that… I’m making a thanksgiving dinner for my buddies this weekend, any fun suggestions? (This is the problem with this post once a day/month I dont always have a ton to say ;) )

Something easy, sweet potato casserole sounds great, what you grew up eating on thanksgiving but simplified. Sounds like a lot of work, yet fun when it is for friends.
Before I came to this country, ok when I was young….:(some of my greatest memories are of my friends at my house sitting all over the place , eating spagetti and drinking wine.

My favorite is the green bean casserole – the standard old recipe that’s probably really bad for you! canned green beans, cream of mushroom soup, and friend onion strings. I think it’s a Campbells recipe!
Oh, and don’t forget the side dish of olives and cranberry sauce!

I didn’t know you were doing the post a day thing.
I am trying a healthy version of the green bean casserole…lemme grab it for you…
1 1/2 lbs fresh green beans, trimmed (you can use frozen too)
1 Tbsp olive oil
1 pkg (10oz) sliced white button mushrooms
1/2 tsp dried thyme
1/2 tsp freshly ground black pepper
1/8 tps salt
4 med scallions, sliced (about 1/2 c)
1 clove garlic, minced
1 c reduced-sodium fat-free chicken broth
1/2 c 1 % milk
2 Tbsp cornstarch
3/4 c Chopped unsalted Macadamia Nuts
Preheat: oven to 375
Steam: greenbeans in steamer basket over large saucepan of boiling water about 10 – 12 minuts, until tender, drain and transfer to 8″X8″ or 9X9 baking dish.
Warm: oil in large nonstick skillet over medium-high heat while greenbeans cook. Add mushrooms, thyme, pepper and salt. Cook stirring often, until tender and lightly browned, 6 to 8 minutes. Add scallions and garlic and cook 1 min longer. Add mushrooms to green beans.
Add: broth to same skillet and bring to a boil over med heat. In a small bowl whisk together milk and cornstarch until dissolved and add to broth. simmer until thickened, about 1-2 min. Pour over greenbeans and stir to combine. Sprinkle with nuts.
Bake: 15 to 20 min until heated and bubbly and nuts are browned.
Do Ahead: You can cook beans the day before, or prepare casserole up to the point of baking in the morning. cover and refrigerate. Heat as directed adding a few minutes to baking time. If you used frozen beans steam them just until tender, about 5 min.

I might be too late, but I’d say fruit salad and some corn bread with gravy.
